Barbecue Chicken Breasts
Ingredients
  • 1/4 Cup Cilantro - Chopped
  • 1/4 Cup Green Onion - Chopped
  • 2 T Ginger - minced
  • 1/4 Cup Orange Juice
  • 1/4 Cup Oyster Sauce
  • 1/4 Cup Rice Wine
  • 2 T Honey
  • 2 T Sesame Oil
  • 2 T Chili Sauce
  • 1 Cup Jake's Original Barbecue Sauce

Chicken and Mushrooms
  • 4 Chicken breasts - Whole with Skin,
  • 1/ Pound Mushrooms - Shiitake or Portabello
  • 12 Tortillas - Corn or Wheat
  • 1/4 Cup Hoi Sin Sauce


Combine all barbecue sauce ingredients in a bowl and stir well. Marinate chicken in half of the sauce for at least 15 minutes but not longer than 2 hours. Clean mushrooms. Grill Chicken (skin side down) over medium heat for 6 minutes. Brush with marinade, turn and grill the other side for another 6 minutes or until centers are no longer pink. Cut into strips. Meanwhile, brush the mushrooms with the reserved marinade and grill until they soften, about 3 minutes per side. If using Portabello mushrooms, cut into strips.

Serve warmed tortillas, or Chinese wrappers, chicken, mushrooms and Hoi Sin Sauce for guests to assemble.

Marinade for Pork Ribs (marinade pour côte de porc barbecue)


Marinating is the process of placing meats and other items into a solution that allows it to be absorbed into the item.  In our case soaking foods such as meats and

vegetables in a seasoned liquid processed a wonderful flavor and tenderizes the meats all at the same time.  To achieve the tenderness in most cases some acidic element like citrus juice or vinegar is added in combination with a series of sugars and salts.  Natural elements like pineapple, papaya, ginger, vinegar, lemon, and citrus are many times the base of the marinade which can speed up the process of marination all with the primary focus of tissue breakdown and absorption of marinade flavors. 

Marinating meat can be one of the simplest and easiest ways of bringing flavor to foods. The only real limitation is "time". Planning ahead is crucial to determining the tenderness and importation of flavor that meats experience. In this post we discuss some suggestions regarding the use of marinades.  But to get you off to a great start we have listed a number of key marinade recipes we used and tried with success.  We like experimentation so we do our best to try as many options as possible.

Effective marinating is based on the amount of time allowed and the degree of acidic elements in the marinade.  Time-wise marinating can take as little as 1 hour to overnight if desired.  Primarily the amount of time required for marinating is related to the size of the cut.  Chickens typically take a minimum of two hours and can also take as long as eight depending on the flavor profile and similar to beef marinating.


There are some basic common sense rules that one can use to ensure that you get the maximum use out of your marinade.



  • First, consider the type of container to be used when marinating. Marinate meat in a glass, heavy plastic or heavy plastic bags. Using metal aluminum and copper containers may cause the marinades' acidity to react with aluminum or copper and cause both the metal and the meat to darken leaving behind a metallic taste.
  • Remove the meat after marinating and discard the leftover liquid.
  • Use about 1/4 cup of marinade per pound of meat. For example, for 2 pounds of beef or chicken strips, use 1/2 cup of marinade.
  • Make extra marinade and set it aside if you want some of the mixture for basting.
  • Planning ahead by starting the marinade in the morning before work or school will ensure that the meat is properly marinated by the end of the day.
  • Once the meat is prepared and covered with the marinade place the meat covered, in the refrigerator.
  • Don't leave meat in marinade longer than 12 hours. Over-marinating can make the meat mushy.
  • Never allow marinating meat to sit out at room temperature -- even for a short period of time.
  • Discard all marinade that has touched raw meat. Do not use it in cooking.
  • DON'T use marinade from raw meat or fish as a sauce.
  • DON'T reuse leftover marinade for other food.
Try teriyaki marinade for an Asian dish, a red-wine based marinade for steak or a yogurt-based marinade for a Middle-Eastern dish.

We've assembled 14 of our best marinade recipes for your use.  Just following the ingredient gathering process and blend accordingly.  Keep in mind the size of meat or type of meat desired for marinating and the time on hand to get the marination process completed.

Cilantro Pork Marinade

Ingredients:
  • 2 Tablespoons Ground Chilies (New Mexico)
  • 3 teaspoons Kosher salt
  • 1 Tablespoon Coarse Ground Black Pepper
  • 6 Garlic Cloves Mashed
  • 1/4 Cup Olive Oil
  • 3/4 Cup Fresh Orange Juice
  • 2 tablespoons Adult Beverage either Tequila or Beer (Optional and not actually necessary)
  • 1/2 Cup Fresh Lime Juice
  • 1 Tablespoon Chopped Oregano
  • 1 Cup Chopped Cilantro

Blend ingredients and apply in a container.  For best results allow the marinade to work for 2 or more hours.

Basic Pork Marinade

Ingredients

Bourbon Pork Marinade:

Ingredients:
  • 1-2 Racks of Pork Ribs
  • 1/4 cup of either bourbon (inexpensive is fine) sparkling cider, sparkling grape juice
    1/4 teaspoon fresh ground black pepper
  • 1/4 cup Dijon mustard
  • 4 teaspoons Worcestershire sauce
  • 1/2 teaspoon kosher salt

Cuban Pork Marinade

Ingredients
  • 3/4 cup extra-virgin olive oil
  • 1 tablespoon orange zest
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1 cup cilantro, finely chopped
  • 1/4 cup lightly packed mint leaves, finely chopped 8 garlic cloves, minced
  • 1 tablespoon minced oregano (2 teaspoons dried oregano)
  • 2 teaspoons ground cumin Kosher salt and pepper
  • 3 racks of Ribs
Blend and cover your steak and let rest for a minimum of 2 hours.

Carne Asada Pork/Rib Marinade

Ingredients
  • 2 Limes Juiced
  • 4 Cloves Garlic Crushed
  • 1/2 Cup Orange Juice
  • 1 Cup Cilantro Chopped
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
  • 1 Jalapeno minced
  • 1/2 Cup Olive Oil
  • 2 Tablespoons White Vinegar
  • 1 - 2 Racks of Ribs
Blend all ingredients and place in container or bag.  Insert flank steak and let marinate overnight.  Remove steak from marinade and barbecue.  Discard marinade after use. 

Honey Mustard Marinade

Ingredients:
1 Rack of Ribs

For Marinade
  • 1/2 teaspoon salt
  • 1/2 cup honey
  • 1/2 cup Dijon mustard
  • 1 teaspoon basil
  • 1 teaspoon paprika
  • 1/2 teaspoon parsley
  • 2 tablespoon soy sauce
Mix all ingredients except ribs in a pan and bring to boil. Lower heat to medium and cook about 10 minutes. Place Ribs in a container and cover with marinade. Soak Ribs for three hours until tender. If desired, Ribs can be soaked overnight for a better taste.

Lemon Zest Pork recipe makes quick work of basic ingredients turning them into a wonderful meal good for dinner or barbecue.

Ingredients

  • 1-2 Racks of Pork Ribs
  • 2 Tbsp lemon zest
  • 1/3 cup lemon juice
  • 2 cloves garlic, crushed
  • 2 Tbsp fresh chopped thyme (or 2 teaspoons dried)
  • 1 Tbsp fresh chopped rosemary (or 1 teaspoon dried)
  • 1 Tbsp Jake's seasoned salt
  • 1 teaspoon ground black pepper
  • 2-3 Tbsp melted butter
  • Lemon slices for garnish

Bourbon Marinated Pork Ribs recipe is delicious with the subtle flavor of bourbon marinated throughout the ribs.

Ingredients:
  • 1-2 Racks of Ribs
  • 1/4 cup of either bourbon (inexpensive is fine) sparkling cider, sparkling grape juice
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 cup Dijon mustard
  • 4 teaspoons Worcestershire sauce
  • 1/2 teaspoon kosher salt

Hawaiian Soy Marinade

Ingredients:
  • 1-14 cups light brown sugar
  • 1 cup soy sauce
  • 1 tbsp. Asian sesame oil
  • 14 tsp. crushed red chili flakes
  • 4 cloves garlic, finely chopped
  • 3 lb. pork baby back ribs
  • 1 -2 piece peeled fresh ginger, finely chopped
  • 3 scallions, thinly sliced
Gochujang (Spicy Asian) Marinated ribs
Ingredients:
  • 1 Rack of Ribs
  • 2 Tablespoons Salt
  • 3 Tablespoons Ginger Powder
  • 1 Cup Gochujang Paste
  • 4 Tablespoons Brown Sugar
  • 2 Large Onions
  • 2 Asian Pears
  • 1/4 Cup Sesame Oil
  • 1 Cup Tamarind Concentrate
  • 1/2 Cup Ketchup
  • 3 Tablespoons Garlic Minced
Wine marinated pork ribs:
Ingredients:
  • 2 Tablespoons Vegetable oil
  • 1 Tablespoon chopped fresh rosemary
  • 1 Garlic Clove, finely chopped
  • 1/2 Cup Dry Red Wine or Grape Juice
  • 1 Teaspoon Sugar
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1 Rack of Pork Ribs
Candied Pork Ribs Marinade
Ingredients:
  • 1 Rack of Pork Ribs
  • 1-1/4 Cup Brown Sugar
  • 2 Tablespoons Jake's Famous Tri-Tip, Steak and Rib Rub
  • 1 Tablespoon Garlic Powder
  • 2 Tablespoons Black Pepper
  • 1 Cup Honey
European/French Style Marinated Pork Ribs
Ingredients:
  • 1 Tablespoon Honey
  • 1 Tablespoon Tomato Paste
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Olive Oil
  • 1/2 Cup White Wine
  • 2 Cloves Garlic Minced
  • 1 Tablespoon Stone Ground Mustard
  • 1 Teaspoon Salt
Asian Teriyaki Marinade

Ingredients
  • 1 Clove Minced Garlic
  • 1/2 Teaspoon Ground Ginger Powder
  • 1 Tablespoon Honey
  • 1/4 Cup Soy Sauce
  • 5 Tablespoons White Sugar
  • 1/2 Teaspoon Corn Starch
  • 1-1/2 Cups Tap Water
  • 1/4 Teaspoon Red Pepper Flakes (If Desired)
  • 1/2 Teaspoon Onion Powder (If Desired)
Blend ingredients and marinate ribs for a minimum 2 hours.

Soy-Dijon Marinade

Ingredients

  • 2 Tablespoons Brown Sugar
  • 1/3 Cup Soy Sauce
  • 1 Teaspoon Dijon Mustard
  • 2 Garlic Cloves minced
  • 1/4 Teaspoon Black Pepper
  • 2 Tablespoons Worcestershire


Blend together and multiply ingredients depending on size of pork ribs.

Greek Pork Marinade

Ingredients

  • 2 Tablespoons Dried Parsley
  • 1 Cup Olive Oil
  • 1/4 Cup Lemon juice
  • 3 Cloves Garlic minced
  • 2 Tablespoons Dijon Mustard
  • 2 Tablespoons Dried Oregano
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Dried Rosemary


Blend ingredients together and place in a container with Pork Ribs marinating for 2 hours minimum.
